Can we schedule the conversation logs to be sent to specific email ID every week?

You can store chat transcript in the database. Then send it to specific email weekly using data explorer.

Go to insights → click on more → go to data explorer → click on create report → click on custom query → select custom database table → then create some fliter (for eg : created_at - current) → save query → then you will see schedule report option under actions dropdown.
