How can I change the default random name (“Wholesome Nightingale” in this case) shown inside the chat transcripts?

We cannot change the name in existing chat transcripts but you can try this for new chats - At the start of the bot flow in the very first steps set the user name in the user properties variables first name and last name, the same name will be reflected in the transcripts.
